Summer Squash Quiche With Thyme

Summer is a time of bounty for those who grow vegetables. Even if you don’t grow your own, the fresh veggies are filling the supermarkets.  One of my favorite veggies is summer squash. Yellow, green, or white, I am a fan.

 Today’s recipe is Summer Squash Quiche.  I’m using yellow squash and mozzarella, but it’s wonderful with zucchini too.  I used a 10-inch tart pan. It’s a perfect recipe for a luncheon, birthday party, or a buffet table. How about a Mother's Day brunch on May 10th?

 

 

 

Ingredients

  • 6 eggs or 4 whole eggs & 2 egg whites or 1 1/2 cups egg substitute
  • 1/2 lb yellow squash (about 2 cups) cut into 1/4-inch-thick rounds
  • 1 tsp fresh thyme leaves
  • 1 cup half-and-half
  • 1/4 tsp hot pepper sauce
  • 1 pie crust
  • 3/4 cup shredded mozzarella cheese
  • 1 tbsp unsalted butter or margarine
  • salt and pepper to taste

Instructions

  •  Bake your crust at 375 degrees F for 10 minutes  
  • Remove from oven and lower temperature to 350 degrees F
  • While crust bakes, melt butter or margarine in pan and add squash and thyme
  • Cook 5 minutes or until tender
  • Remove squash from pan and let cool
  • Whisk eggs, half-and-half, salt, pepper, and hot sauce in bowl
  • Arrange squash on bottom of the crust and sprinkle cheese on top
  • Pour egg mixture into crust (might be some left over)
  • Bake quiche 30–35 minutes, or until filling is golden and center is set
  • Remove from oven and cool 15 minutes
  • Slice and serve

Mango Bliss Frozen Smoothie

The summer heat is here, and I need a cold breakfast, lunch or snack drink. If you like mangos like I do, you must try this luscious and creamy smoothie. It is both refreshing and filling. You can use fresh or frozen mango chunks. If you start with fresh mango, cut in chunks and place on a parchment covered cookie sheet. Place in the freezer for 30 minutes along with a sliced banana. Use immediately or store in a freezer container.  The frozen banana and mango add a creamy smoothness reminiscent of ice cream. Yum!

This is also a fabulous afternoon snack or even a dessert that is filled with antioxidants. Research shows that antioxidant compounds found in mango help protect against a long list of cancers. Besides that, it helps with eye health, gut health, lowers cholesterol and more. Add low fat Greek yogurt for protein or a tablespoon of protein powder, a frozen banana, & juice and in 5 minutes you have a frozen, lush treat that is good for you! Surprise family and friends with a fast dessert in a pretty glass with optional garnish of fruit.



Mango Bliss Frozen Smoothie

Ingredients

  • 3/4 cup frozen mango chunks
  • 1/2 banana sliced and frozen
  • 1/2 cup non-fat plain Greek yogurt
  • 3/4 cup cold mango or pineapple juice

Instructions

  • Combine all ingredients in a food processor or high speed blender
  • Process 5 to 6 minutes until smooth and creamy
  • Serve immediately

Green Avocado & Spinach Smoothie

  Before I discuss today's recipe, I'd like to do an update on the top 50 posts from Comfort Spring in 2025.  As of today, I have written & scheduled 45 of the 50 posts. I can easily do the other 5 in the next week. All top 50 will be shared before the end of 2026. Thanks for your patience.

Now for today's recipe:

When I first started blogging some years ago, I started the day with a smoothie almost every morning. A few years later, I just got tired of it. My smoothies had almost disappeared in my breakfast menu ideas. Oatmeal became the main morning dish for breakfast. Recently I have again made the choice to add smoothies as a healthy, delicious morning choice. I like to have one for breakfast, lunch, or afternoon snack.

Back in the early days of blogging (2016), I shared Start Your Day With A Spinach Smoothie. I think it was the first recipe I shared. Spinach is one of the healthiest vegetables you can eat.  It is a super food loaded with tons of nutrients in a low-calorie package. Dark leafy greens like spinach are important for skin and hair, bone health, and provide protein, iron, vitamins and minerals. Just do a search for the word spinach and you will see pages of articles  on the health benefits of spinach. Just eating one serving of spinach a day can make your brain 11 years younger.  A diet rich in leafy green vegetables help prevent cognitive decline according to recent research.   It slows the aging process.

 

 Today’s recipe is a quick and delicious banana, avocado, and spinach smoothie that can be used as a breakfast or snack. It’s really a good basic recipe that can be adapted to diet or taste needs. For vegan, replace the honey with maple syrup or agave nectar. Can’t eat nuts? Choose a different milk. I choose vanilla almond milk for a nutty flavor with a touch of vanilla. Need more protein? Add a scoop of protein powder. Have ripe fruit you need to use? Chop and add. Remember to make it your own and vary with what’s in the refrigerator. This recipe makes 2 smoothies; put the second in a covered bottle or jar in the fridge for a snack in the afternoon.  Give it a shake or two and your snack is good to go.

 


 

 

 

Ingredients

  • 1 cup baby spinach leaves
  • 1 ripe avocado, pitted, peeled, & halved
  • 1 ripe banana (try frozen for extra creamy)
  • 1 tbsp honey or dark agave nectar
  • 1 cup ice cubes
  • 1 1/2 cups vanilla almond milk or milk of choice

Instructions

  • Add all ingredients except ice to blender
  • Blend 50 to 55 seconds
  • Add ice cubes and blend again for 30-35 seconds.
  • Serve immediately
