When fresh figs are in the market, you can make a quick, fig and arugula salad with goat cheese and a simple balsamic dressing. It's fast to make, and quite tasty.
This is such an easy, yet elegant salad. The spiciness of the arugula paired with the sweetness of the figs and honey is wonderful, and the balsamic ties it all nicely together! It's a very versatile recipe.
Arugula & Fig Salad
Use organic when available. Serves 4
Ingredients
- 4 cups arugula
- 8 fresh figs quartered
- 1/4 cup grated Parmesan cheese
- 2 tbsp pine nuts toasted
- 2 tbsp honey
- 2 tbsp balsamic vinegar
Instructions
- In a small bowl, combine honey and balsamic vinegar
- Whisk until well combined
- Place arugula, figs, Parmesan cheese, and pine nuts together in a bowl
- Drizzle vinegar & honey on salad
- Toss lightly and serve immediately

Carol, this is an interesting salad that I would love to make. During the winter months in Florida we have a lot of pot luck dinners that we share making the dinner between friends and I am often assigned to bring the salad. This would be a big hit (if I can get fresh figs). I'm saving this one. Thanks.

ReplyDeleteMy husband loves figs! We actually have a potted fig tree and get about 5 figs a summer..lol. We endup buying them in Costco or Trader Joes when they are in season, for about 2 weeks.
